Mummy Wellington: Halloween's Most Impressive Main Course

Beef Wellington is already dinner-party royalty. Wrap it in crisscrossed pastry bandages, give it olive eyes, and it becomes the centerpiece of Halloween — a mummy that reveals perfect pink beef when carved.

Why Wellington Works for Halloween

Built for Drama

Wellington is designed for the reveal: the first cut exposes the pink center against the mushroom duxelles and golden pastry. On Halloween, that reveal becomes theater — the mummy gives up its secret.

The Bandage Technique

Instead of wrapping the beef in one sheet of puff pastry, cut the pastry into strips and lay them across the beef at angles, leaving small gaps. The gaps read as bandage separations, and two black olives pressed in near one end become the eyes.

Mummy Wellington: The Recipe

Ingredients (serves 4)

  • 800 g beef tenderloin, trimmed and tied
  • 400 g mushrooms, finely minced
  • 2 shallots, minced; 2 garlic cloves, minced
  • 2 tbsp butter, plus thyme sprigs
  • 6 slices prosciutto
  • 2 sheets puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • 2 black olives, for eyes
  • Salt, pepper, Dijon mustard

Method

  1. Sear the seasoned tenderloin on all sides until browned. Brush with Dijon and cool completely.
  2. Cook the mushrooms, shallots, and garlic in butter until all moisture evaporates — a dry duxelles is essential. Cool.
  3. Lay out plastic wrap, arrange the prosciutto in overlapping rows, spread with duxelles, and roll tightly around the beef. Chill 30 minutes.
  4. Cut one pastry sheet into 2 cm strips. Wrap the beef first in the second sheet (sealed underneath), then lay strips diagonally across the top in a bandage pattern, leaving a small gap near one end for the face.
  5. Brush with egg wash, press in the olive eyes, and bake at 200 C (400 F) for 25–30 minutes until deeply golden. Rest 10 minutes before carving.

Frequently Asked Questions (FAQ)

How do I keep the pastry from getting soggy?

Two rules: the duxelles must be cooked completely dry, and the beef must be fully cooled before wrapping. A layer of prosciutto between beef and pastry acts as a moisture barrier.

Can I prepare it ahead?

Yes — assemble the whole mummy (without egg wash) up to 24 hours ahead and refrigerate. Brush with egg wash just before baking. Do not freeze after adding the olive eyes.
